How Jasmine Dragon Pearls are made

On my blog I mentioned witnessing how our Jasmine Dragon Pearls were made. I had the pleasure of seeing it all in action during a trip to Fujian in China in August of last year. It really is amazing how much effort goes in to making these little balls of tasty green tea.
Fujian is a Chinese province on the southeast coast of the country. The name Fujian comes from the two cities of Fuzhou and Jianíou during the Tang Dynasty. Of all the provinces in China, Fujian is the most culturally and linguistically diverse. We also get all of our Oolong tea from Fujian, China.
It all begins in the spring when the tea for the Jasmine Pearls has to be picked and processed. Green tea is used so once the tea leaves have been picked they are pan fried and then rolled into their pearl shape by picking up a few leaves at a time and rolling then into ball using paper. The green tea pearls are then dried and stored until summer.
Summer in Fujian is Jasmine Flower Season so the Jasmine Flowers are picked at a certain stage (before the flower has opened too much) to be used in flavouring the green tea.

To achieve the natural flavouring our Jasmine Dragon Pearls posses, the pearls are layered with Jasmine Flowers and left over night for the flavour to infuse. The next day the flowers are blown off and this process is repeated for two more nights meaning our Jasmine Pearls are infused for a total of three nights. A number that we deliberated over for awhile but finally decided on as it gives a nice happy medium. The jasmine doesnít overpower the green tea taste so you get a really nice combination of flavours Ė both of green tea and jasmine! If you want a stronger or weaker flavour of jasmine alter the infusion time of your tea but remember that this will also affect the flavour of the green tea the pearl is comprised of.
I find it incredible that so much effort goes into each Jasmine Dragon Pearl and I like to remember that when Iím drinking the tea so that I savour and appreciate the flavours so much more. Each ball has been handcrafted, stored and then layered with handpicked flowers and left to infuse. You canít really ask for more effort to go into you tea can you?
Unfortunately many tea companies will cut corners and use oils or chemicals to flavour their Jasmine Dragon Pearls but we would never compromise on taste and quality by doing this. Only the best for us! The only ingredients in our tea is Green Tea picked in the spring and stored until the jasmine flowers are in bloom and are picked in the summer.
To brew Jasmine Dragon Pearls put 3-4g of pearls into you infuser/tea strainer. Use boiled water that has cooled to 75 degrees C and infuse for 2-4 minutes depending on taste. This tea can then be re-brewed up to three times. Of course just like with all teas these are just guidelines, the most important thing to do is experience with your teas. For example I like the taste of Green tea to be pronounced when I drink Jasmine Pearls so I let mine brew for the full 4 minutes before drinking. That way I can be sure to get a fuller flavour but if you like your tea to be more delicate just brew for 2minutes. You can always remove the infuser (if your teapot has a removable infuser which is a really helpful attribute for a teapot to have), try the tea and if it isnít strong enough put the infuser back in and continue to brew.
As Jasmine Dragon Pearls are made with Green tea you get the many benefits associated with green tea as well as an amazing flavour when you brew it. Green tea is known to be high in anti-oxidants known as Epigallocatechin Gallate (EGCG). At LuLin Teas we donít like to make any health claims about our teas but I think itís safe to say that the anti-oxidants found in Green tea are pretty super!
